Mediterranean Chicken and Polenta

first_imgLiven up boring chicken breasts by cooking them with herbed tomatoes, olives, and white wine. Serve over easy-to-make polenta.Ingredients:1/2 6 1/2 ounce jar oil-packed dried tomatoes with Italian herbs4 small skinless, boneless chicken breast halves (1 to 1-1/4 lb.)1 cup assorted olives, drained1/2 cup dry white wine or reduced-sodium chicken broth4 small bay leaves (optional)1 cup cornmealDirections:1. Heat oven to 375 degrees F. Drain tomatoes, reserving the oil. Season chicken with salt and black pepper. In 10-inch oven-going skillet heat all the reserved oil over medium-high. Cook chicken in hot oil 3 minutes each side or until browned; remove skillet from heat. Add tomatoes, olives, wine, and bay leaves. Transfer to oven. Bake, uncovered, 10 to 15 minutes or until an instant-read thermometer registers 170 degrees F when inserted in chicken.2. Meanwhile, for polenta, in large saucepan bring 3 cups water to boiling. In a bowl combine cornmeal, 1 cup cold water, and 1 tsp. salt; gradually stir into boiling water. Cook and stir until thick and bubbly. Reduce heat; stir occasionally. Remove and discard bay leaves. Serve chicken with polenta and olives. And, statistically, these are QBs who can take advantage of favorable matchups. Realistically, though, you probably don’t want to trust either with your fantasy championships on the line. However, they are the top widely available streamers, and they’re better than a lot of bigger-name QBs this week, such as Tom Brady (vs. Bills), Derek Carr (@ Chargers), Carson Wentz (vs. Cowboys), Josh Allen (@ Patriots), Baker Mayfield (vs. Ravens), and even Kirk Cousins (vs. Packers). Push to Preserve 7 Acres of Waterfront Property Advances

first_imgBy Chris Rotolo | ATLANTIC HIGHLANDS – The borough’s government leaders will explore a collaborative effort with Monmouth County to preserve the last piece of undeveloped land on the Sandy Hook Bay.The announcement came at the end of a July 11 Borough Council meeting, where approximately 75 residents packed the municipal courtroom for a presentation about conserving the McConnell tract, a 7-acre plot of land located between Avenue D and Bowne Avenue, which is targeted for development as 21 beachfront homes.“We’re not making any more beachfront property,” Councilman Jon Crowley said. “When this goes, it’s gone forever. As elected officials, we have to be sensitive to the budget, because needs do arise, whether it’s a new truck or a failing bulkhead. We’re not going to be cavalier. We are thinking about the possibilities of those ratables. But the price of a ratable doesn’t compare to what’s priceless, which is this land.” In terms of what the borough could potentially offer for the acquisition, Hubeny said the municipality will have about $600,000 in its open space fund after FEMA reimburses the town for approximately $331,000 in Super Storm Sandy repairs to the Bayshore Trail.But it is future storm damage that has Fligor feeling leery about acquiring new water front property for this park.“It cost us about a million dollars to fix up the trail on our own after Sandy and then another $80,000 after the next storm. And that was with the county’s help,” Fligor said. “That’s a lot of money for two storms and Atlantic Highlands can’t afford to keep doing that.”The next Borough Council meeting is scheduled for July 25, where the members could potentially adopt a resolution to join the county in pursuit of the McConnell tract.This article was first published in the July 19-26, 2018 print edition of The Two River Times. The group has appealed to the Monmouth County Board of Recreation Commissioners (MCBRC) and spoken with county Freeholder liaison Lillian G. Burry about having the county purchase the property and save it from development.According to Chiles, the owner of the plot – Arthur “Bud” McConnell – has received a contingency contract from Denholtz Associates and a pending application is due to be heard before the planning board July 31.Crowley’s comments preceded several concerns posed by Councilman Louis Fligor and Mayor Rhonda C. Le Grice, including a potential contamination issue resulting from past diesel fuel spills and subterranean oil pipelines. Assuming those underground pipes have not been removed, Fligor is also interested to know if they have been emptied or merely capped with product still inside. “If we were interested in purchasing the land and it was contaminated, we would need to know if that liability belongs to the originator of the contamination or if the burden falls on the buyer,” Fligor said. “In this case, what we’ve pitched them on is buying the property as a county park,” Chiles said. “It would not be a municipal park. But it can be negotiated where part of it can be county and part municipal. These are all discussions that need to happen. The request here is that the borough initiates that with Monmouth County.”center_img Crowley cited a chart of Monmouth County from 1972 to 2012, which showed that a majority of open green space seen four decades earlier had since been developed. He stressed to his fellow council members the urgency of this situation.The borough’s intention to save the land from development was good news for Neighbors For Waterfront Preservation (NWP), a citizens’ group led by Benson Chiles, whose members envision the property as a park and a continued launch point for the town’s sailing education program. However, Hubeny also confirmed that approximately $2 million has already been spent on remediation of the property and the only contamination still present is located in the horizontal groundwater below, which he said should self-attenuate by 2030 and would not interfere with the placement of a structural foundation.The current asking price of the property is something Le Grice wondered about, as she noted that in past years, when the borough had looked into purchasing at least a portion of the plot, it was up to $1.5 million.Chiles said the point of this effort is not for the municipality to purchase the land in full, but to support the county’s acquisition of the tract as a county park. Should the county use its funding to make the purchase in cooperation with Atlantic Highlands, it would alleviate some of the borough’s financial responsibility for the initial investment. Fishing Report — October looking good on the main lake

first_imgReel Adventures Fishing Charters guide Kerry Reed has been away on th West Coast of late. Reed gives a capsule account of life on the ocean as well as helping local fishermen catch the big one on Kootenay Lake.Well, we finally made it back from the West Coast a couple weeks ago. This year’s Salmon fishing was a lot different than most years, probably because of the unusually warm waters. The run of big fish that we usually see just didn’t seem to happen like normal.  We did manage a few big fish up to 32 pounds, but most days saw smaller fish. The trade off was okay though, because there seemed to be a lot of those fish around.  Some days out on the bank, we landed more than 60 fish per day.And I remember one outstanding day where we landed over 100 fish.  So, the non-stop action made up for the size of Salmon.We also caught a lot more Halibut this year and the sizes were up too.  Most of our Hali’s averaged between 15 – 25 pounds, with our biggest couple weighing in around 60 pounds. All in all, we made the best of our season and most people went home happy.  Already planning for next year.Kootenay LakeAnd now we’re back on Kootenay Lake and already into the swing of things. Our last few charters have seen a lot of action for this time of year. Most days we’re catching between 5 – 10 fish.  We’ve been landing Rainbows up to 18 pounds and Dolly Varden (Bull Trout) up to 15 pounds.  I’ve also heard of a few Rainbows over 20 pounds and even up to 25 pounds. That’s amazing fishing at this time. And things are only going to get better. The water temperature is still a bit warm for these fish to begin to get active. So, right now, the fish are scattered. But, as the temperatures cool and our water temp drops, these fish will be getting more and more aggressive.  The best is yet to come.  My favorite time is approaching. October, November, December are prime months for fishing our magnificent lake. What are they biting on??? Since the water temperature is still above 60 degrees, most of the fish are staying deep.  So, we have been catching a lot on the usual flasher/hoochie combo. However, some of our latest fish have been caught on the surface.  So, we need to mix it up a bit. Bucktail flies have been catching a few, as well as lyman plugs and apex lures on the surface. The best bet is to run some lines on the surface, and some lines on the downrigger.  My favorite depths have been between 90 ft – 140 feet. Bucktail fly colors working for me have been: 215, 221, 226, and 228. And my Lyman plugs so far working best are:  #16, 53, 55, and lucky number 69.  Not one pattern has been working better than any other, so keep changing it up until the fish tell you what they want.Derby, Derby, Derby It’s that time of year again — Fishing Derby season. October is not only the beginning of our good fishing, but it’s the beginning of the Fishing derbies. Here’s a list of what is  coming up: October 13-14 – Nelson City Police Alumni Derby November 10-12  –  Kaslo Rainbow Derby          Tight Lines………….. She will work with the county Farm Bureaus to address issues important to members and their communities.Harlow previously was a program specialist with the Center for Cooperatives at Ohio State University’s College of Food, Agricultural and Environmental Sciences. She received her bachelor’s degree from Strayer University, a master’s from Ohio Christian University and is working toward a masters of business administration at Ohio State University. Harlow served four years in the United States Air Force.She and her husband, Kip, own and operate a mixed livestock and forage farm. She has been active in Ohio Farm Bureau’s Young Agricultural Professionals program and American FarmBureau’s Young Farmers & Ranchers program.
